Is specifically responsible for the beverage financial results, bar service portfolio and all aspects of Bartender, Cocktailer/Bar servers.

  • Manages the specific standards of the bar area (including but not limited to):
    • o Cleanliness (floor to ceiling)
    • o Bar Uniforms (standards upheld, Bar team uniform deductions)
    • o Beverage menus accurate & in good repair
    • o Ensure appropriate opening/closing procedures in place and adhered to
    • o Steps of Service
    • o Adherence to ‘5-8-16 Rule’ at all times
    • o Strong product knowledge
    • o Service standards and systems
    • o Reservation levels & proper seating rotation to maximize restaurant capacity in all service periods
    • o Ensures Team Members have the ‘tools to do the jobs’ (smallwares)
    • o Promotes MOTs
  • Manages standards throughout the restaurant that are specific to the beverage portfolio (including but not limited to):
    • o Standardized beverage presentation, portioning & timing
    • o Promotes strong knowledge of all beverage offerings with all TM’s throughout the restaurant
    • o Delivers ‘world class’ beverage seminar to new Service TM’s
    • o Ensures ordering is done effectively and we do not ‘86’ products or carry too much inventory
    • o Ensures all beverage stock is stored in an orderly fashion, is secure, and is properly rotated following FIFO principles
    • o Oversees & drives beverage program evolution (much like the culinary program does) – new products, features, promotions, etc.
    • o Completes weekly beverage inventory counts, troubleshoots cost concerns, and reports order invoices & submits costs to GM by Monday at noon.
    • o Completes all required beverage ordering on a weekly basis ensuring we never 86 any beverage product
    • o Ensures POS buttons are entered, priced, print and report properly for all beverage products
    • o Drives use of Responsible Service Log by all Mgrs and TMs
  • All aspects of Bar Team Human Resources (including but not limited to):
    • o Hiring procedures adhered to 100%
    • o Regular ‘one on one’s’
    • o Reviews are timely
    • o ‘Coaching on the fly’
    • o Following up on complaints or service issues with Team Members quickly and effectively following progressive discipline as required
    • o Training systems are in place and adhered to
    • o Schedules are completed appropriately and timely
